Ingredients:

For the Stuffing Masala:

  • 8-10 small baingan (eggplants/brinjals)
  • 2 tablespoons roasted gram flour (besan)
  • 2 tablespoons roasted peanut powder
  • 1 tablespoon grated dry coconut (optional)
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon fennel seeds (saunf), crushed
  • ½ teaspoon amchur (dry mango powder)
  • 1 teaspoon salt (or as per taste)
  • 1 teaspoon sugar (optional)
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon mustard oil (for mixing)

For Cooking:

  • 2 tablespoons mustard oil (or any cooking oil)
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 1 pinch asafoetida (hing)
  • 1 dried red chili (optional)
  • 8-10 curry leaves (optional)
  • 1 medium-sized onion, finely chopped (optional)
  • 1 medium-sized tomato, finely chopped (optional)
  • ½ cup water (if needed)

Step-by-Step Instructions:

Step 1: Prepare the Baingan (Eggplants)

  1. Wash the small eggplants thoroughly and pat them dry with a kitchen towel.
  2. Make a cross-shaped slit from the base towards the stem, keeping the stem intact so that the eggplant holds together.
  3. Soak them in salted water for 10-15 minutes to prevent bitterness.

Step 2: Prepare the Stuffing

  1. In a mixing bowl, combine roasted gram flour, peanut powder, dry coconut (if using), coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, fennel seeds, amchur, salt, and sugar.
  2. Add 1 tablespoon mustard oil and mix everything well to form a coarse, moist stuffing.
  3. Stuff each baingan with this masala mixture carefully using a spoon or your fingers. Press gently so that the stuffing stays inside.

Step 3: Cook the Stuffed Baingan

  1. Heat 2 tablespoons mustard oil in a pan on medium heat until it starts smoking slightly. This removes the raw taste of mustard oil.
  2. Add mustard seeds, cumin seeds, asafoetida, and dry red chili. Let them splutter.
  3. Add curry leaves (if using) and stir.
  4. If using onions, add them now and sauté until golden brown.
  5. If using tomatoes, add them and cook until they turn soft and mushy.
  6. Carefully place the stuffed baingan in the pan, ensuring they sit well without overlapping.
  7. Reduce the heat to low, cover the pan, and let the baingan cook for 10-12 minutes. Stir occasionally to prevent burning.
  8. Once the baingan starts softening, gently turn them over so they cook evenly.
  9. If needed, sprinkle a little water, cover, and let them cook for another 8-10 minutes until they are tender and fully cooked.

Step 4: Garnish and Serve

  1. Once the baingan is cooked, check for seasoning and adjust if needed.
  2. Garnish with freshly chopped coriander leaves.
  3. Serve hot with roti, paratha, or steamed rice.
