For the Sabji

  • Brinjals (Baingan) – 2 medium-sized (chopped into small cubes)
  • Fresh Fenugreek Leaves (Methi) – 1 cup (finely chopped)
  • Onion – 1 large (finely chopped)
  • Tomatoes – 2 medium (finely chopped or pureed)
  • Green Chilies – 2 (chopped)
  • Garlic – 4-5 cloves (finely minced)
  • Ginger – 1-inch piece (grated)
  • Mustard Seeds – ½ teaspoon
  • Cumin Seeds – ½ teaspoon
  • Turmeric Powder – ½ teaspoon
  • Red Chili Powder – 1 teaspoon
  • Coriander Powder – 1 teaspoon
  • Garam Masala – ½ teaspoon
  • Salt – to taste
  • Oil – 2 tablespoons
  • Water – ¼ cup (if needed)

For Garnishing

  • Fresh Coriander Leaves – 2 tablespoons (finely chopped)
  • Lemon Juice – 1 teaspoon

Instructions

Step 1: Preparing the Ingredients

  1. Wash the brinjals thoroughly and cut them into small cubes. To prevent discoloration, place them in a bowl of salted water.
  2. Wash the fresh fenugreek leaves and chop them finely. If the leaves taste too bitter, soak them in salted water for 10 minutes and then rinse.
  3. Finely chop the onions, tomatoes, green chilies, garlic, and ginger.

Step 2: Cooking the Sabji

  1. Heat oil in a pan or kadhai over medium heat.
  2. Add mustard seeds and cumin seeds. Let them splutter for a few seconds.
  3. Add the chopped garlic and grated ginger. Sauté for 30 seconds until aromatic.
  4. Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  5. Add the chopped tomatoes and cook until they turn soft and mushy. Stir occasionally.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Now, add the chopped brinjals and mix them with the masala. Cover the pan and cook for 5-7 minutes on low-medium heat. Stir occasionally to avoid sticking.
  8. Once the brinjals start softening, add the chopped fenugreek leaves. Mix well and cook uncovered for another 5 minutes.
  9. If needed, add a little water to prevent burning. Let the sabji cook until the brinjals are completely tender and the flavors are well blended.
  10. Finally, add garam masala and give it a good mix. Turn off the heat.

Step 3: Garnishing and Serving

  1. Sprinkle chopped coriander leaves on top.
  2. Drizzle a little lemon juice for extra freshness.
  3. Serve hot with roti, paratha, or rice.
