Baingan Chana Dal Curry Recipe
Baingan Chana Dal Curry is a delicious and nutritious Indian dish made with eggplant (baingan) and split Bengal gram (chana dal). This dish combines the earthy flavors of lentils with the smoky taste of eggplant, making it a perfect accompaniment to rice or roti. The rich and mildly spiced gravy enhances the overall flavor, making it a comforting and wholesome meal.
Ingredients
For the Dal:
- ½ cup chana dal (Bengal gram)
- 2 cups water
- ½ teaspoon turmeric powder
- ½ teaspoon salt
For the Curry:
- 2 medium-sized eggplants (baingan), diced
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- ½ teaspoon cumin seeds
- ½ teaspoon mustard seeds
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- ½ teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions
Step 1: Cooking the Chana Dal
- Wash and soak the chana dal in water for 30 minutes.
- In a pressure cooker, add soaked chana dal, 2 cups of water, turmeric powder, and salt.
- Pressure cook for 2-3 whistles or until the dal is soft but not mushy. Set it aside.
Step 2: Preparing the Eggplant
- Heat 1 tablespoon of oil in a pan and add the diced eggplants.
- Sauté them for 5-7 minutes until they turn soft and slightly golden. Remove and set aside.
Step 3: Making the Curry
- Heat the remaining oil in the same pan. Add mustard seeds and cumin seeds.
- Once they start spluttering, add the chopped onions and green chilies. Sauté until onions turn golden brown.
- Add the ginger-garlic paste and cook for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and oil starts separating.
- Now, add turmeric powder, coriander powder, red chili powder, and salt. Stir well.
- Add the cooked chana dal along with the sautéed eggplants and mix everything together.
- Simmer for 5 minutes, allowing the flavors to blend well.
- Sprinkle garam masala and mix.
Step 4: Garnishing and Serving
- Turn off the heat and garnish with fresh coriander leaves.
- Serve hot with steamed rice, roti, or paratha.
Tips for the Best Baingan Chana Dal Curry
- Soaking the chana dal for at least 30 minutes ensures even cooking.
- Use small or medium-sized eggplants for better flavor.
- You can slightly roast the eggplants before adding them for a smoky taste.
- Adjust spice levels according to your preference.
- If you prefer a thinner consistency, add some water while simmering.
