- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds (jeera)
- ½ teaspoon mustard seeds (rai)
- 1 dry red chili (optional)
- ½ teaspoon turmeric powder (haldi)
- ½ teaspoon red chili powder
- 1 teaspoon coriander powder (dhania powder)
- ½ teaspoon garam masala
- ½ teaspoon amchur (dry mango powder) or lemon juice
- Salt to taste

- ½ teaspoon fennel seeds (saunf) for a mild sweetness
- 1 tablespoon gram flour (besan) for a slightly thick texture
- ½ cup boiled potatoes, diced (for a heartier version)

Preparation
Step 1: Cleaning and Chopping Spinach
- Take fresh spinach leaves and separate them from thick stems.
- Wash them thoroughly in water to remove dirt and grit. It’s best to soak the leaves in water for 5–10 minutes and then rinse them multiple times.
- Drain the excess water and finely chop the spinach leaves.
Cooking Process
Step 2: Preparing the Tempering (Tadka)
- Heat oil or ghee in a large pan or kadai on medium heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add the dry red chili (if using), followed by chopped garlic and ginger. Sauté for a few seconds until fragrant.
- Add chopped onions and cook until they turn translucent.
Step 3: Cooking the Spinach
- Add green chilies and tomatoes. Sauté until the tomatoes turn soft and mushy.

- Cover and cook for 5–7 minutes on low flame. The spinach will release water. Stir occasionally.

- Once the spinach is cooked and the water is mostly evaporated, add garam masala and amchur powder (or lemon juice).
- If using besan, sprinkle it now and cook for another 2 minutes while stirring.
- If adding paneer or boiled potatoes, mix them in and cook for 2 more minutes.
