Ingredients

  • Cauliflower (Gobi): 1 medium-sized, cut into medium-sized florets
  • Spinach (Palak): 2-3 cups, washed and chopped
  • Onion: 1 large, finely chopped
  • Tomato: 2 medium, finely chopped or pureed
  • Green Chilies: 2, slit or chopped
  • Ginger-Garlic Paste: 1 tablespoon
  • Oil or Ghee: 2-3 tablespoons

Spices:

  • Cumin Seeds: 1 teaspoon
  • Turmeric Powder: ½ teaspoon
  • Red Chili Powder: ½ teaspoon (adjust to taste)
  • Coriander Powder: 1 teaspoon
  • Garam Masala: ½ teaspoon
  • Salt: to taste

Optional Garnish:

  • Fresh Cream: 1 tablespoon (optional, for richness)
  • Fresh Coriander Leaves: 2 tablespoons, chopped

Preparation Steps

Step 1: Prepare the Cauliflower
  1. Cut the cauliflower into medium-sized florets.
  2. Soak the florets in salted warm water for about 10 minutes to remove any impurities. Drain and set aside.
Step 2: Blanch the Spinach
  1. Boil water in a pot, add the spinach leaves, and let them blanch for 2-3 minutes.
  2. Immediately transfer the spinach to a bowl of ice water to retain its vibrant green color.
