Palak Gobi (Cauliflower with Spinach) Recipe

Ingredients
For the main dish:
- Cauliflower (Gobi): 1 medium-sized, cut into medium-sized florets
- Spinach (Palak): 2-3 cups, washed and chopped
- Onion: 1 large, finely chopped
- Tomato: 2 medium, finely chopped or pureed
- Green Chilies: 2, slit or chopped
- Ginger-Garlic Paste: 1 tablespoon
- Oil or Ghee: 2-3 tablespoons
Spices:
- Cumin Seeds: 1 teaspoon
- Turmeric Powder: ½ teaspoon
- Red Chili Powder: ½ teaspoon (adjust to taste)
- Coriander Powder: 1 teaspoon
- Garam Masala: ½ teaspoon
- Salt: to taste
Optional Garnish:
- Fresh Cream: 1 tablespoon (optional, for richness)
- Fresh Coriander Leaves: 2 tablespoons, chopped
Preparation Steps
Step 1: Prepare the Cauliflower
- Cut the cauliflower into medium-sized florets.
- Soak the florets in salted warm water for about 10 minutes to remove any impurities. Drain and set aside.
Step 2: Blanch the Spinach
- Boil water in a pot, add the spinach leaves, and let them blanch for 2-3 minutes.
- Immediately transfer the spinach to a bowl of ice water to retain its vibrant green color.
- Drain the water and grind the spinach into a smooth paste. Set aside.

- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

- Add the prepared spinach paste to the masala. Stir well and cook for 3-4 minutes.
- Add the sautéed cauliflower florets and mix gently to coat them with the spinach gravy.

- Sprinkle garam masala and mix gently.
