Mashed Cauliflower Dish
Gobi Bharta is a flavorful and comforting Indian dish made with roasted or boiled cauliflower that is mashed and cooked with aromatic spices. It’s an easy-to-make, nutritious recipe that pairs perfectly with chapati, paratha, or rice. Below is a step-by-step guide to preparing this delicious dish.
Ingredients:
For roasting the cauliflower:
- 1 medium-sized cauliflower (about 500 grams)
- 2 tablespoons oil
- ½ teaspoon turmeric powder
- Salt to taste
For the masala:
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 2-3 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Preparation Steps:
1. Prepping the cauliflower:
- Wash the cauliflower thoroughly and pat it dry. Cut it into medium-sized florets.
- Preheat the oven to 200°C (400°F).
- Place the cauliflower florets in a mixing bowl. Drizzle with 2 tablespoons of oil, sprinkle turmeric powder, and add salt. Toss to coat the florets evenly.
- Arrange the florets on a baking tray lined with parchment paper. Roast them in the oven for about 20-25 minutes until they are golden brown and slightly charred at the edges. Flip them halfway through for even roasting.
- Alternative method: If you do not have an oven, you can dry-roast the florets on a tawa (griddle) or in a pan until lightly charred.
2. Preparing the masala:
- Heat 2 tablespoons of oil or ghee in a heavy-bottomed pan or kadai over medium heat.
- Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another 1-2 minutes until the raw aroma disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy. This may take 5-7 minutes. Stir occasionally to prevent sticking.
3. Adding the spices:
- Once the tomatoes are cooked, add red chili powder, turmeric powder, coriander powder, and salt. Mix well to combine the spices with the masala.
- Cook for another 2 minutes, allowing the spices to release their flavors.
4. Mashing the cauliflower:
- Remove the roasted cauliflower from the oven and let it cool slightly.
- Using a fork or a potato masher, mash the cauliflower into a coarse texture. Do not over-mash; the texture should be slightly chunky.
- Add the mashed cauliflower to the prepared masala in the pan. Mix thoroughly so that the cauliflower is well-coated with the masala.
5. Cooking the bharta:
- Reduce the heat to low and let the mixture cook for 5-7 minutes. Stir occasionally to prevent it from sticking to the pan.
- Add garam masala and mix well. Taste and adjust salt and spices as needed.
- Turn off the heat and garnish with fresh coriander leaves.
Serving Suggestions:
- Serve Gobi Bharta hot with chapati, paratha, or naan.
- It also pairs well with plain steamed rice or jeera rice for a comforting meal.
- Add a side of raita or pickle to enhance the flavors.
Tips and Variations:
- For a smoky flavor: Roast the cauliflower over an open flame until charred, or use the traditional dhungar method by infusing smoke using a piece of hot charcoal and a few drops of ghee.
- Add peas: A handful of boiled or steamed green peas can be added for a pop of color and additional nutrition.
- Vegan option: Use oil instead of ghee to keep the recipe vegan-friendly.
- Texture: If you prefer a smoother consistency, blend the roasted cauliflower slightly before adding it to the masala.
