For Cooking Moong Dal:
- 1 cup yellow moong dal (split yellow lentils), washed and soaked for 30 minutes
- 3 cups water
- 1 teaspoon turmeric powder

- 2 cups cauliflower (gobi), cut into small florets
- 2 tablespoons oil (vegetable oil or mustard oil)
- 1 teaspoon cumin seeds (jeera)
- 1 medium onion, finely chopped
- 2-3 green chilies, finely chopped
- 1-inch piece of ginger, grated
- 2 tomatoes, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt, to taste
- Fresh cilantro (coriander leaves) for garnish
Instructions:
Step 1: Cook the Moong Dal
- In a pressure cooker or saucepan, combine the soaked moong dal, 3 cups of water, turmeric powder, and salt.
- Cook on medium heat until the dal is soft and cooked well (about 4-5 whistles in a pressure cooker or around 30 minutes if cooking on stovetop).
- Once cooked, set aside.
Step 2: Prepare the Cauliflower
- Heat 2 tablespoons of oil in a large pan or wok over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add finely chopped onion and sauté until golden brown.
Step 3: Add Vegetables and Spices
- Add grated ginger and chopped green chilies. Sauté for 1-2 minutes until aromatic.
- Toss in the chopped tomatoes and cook until they soften, stirring occasionally.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
Step 4: Add Cauliflower
- Add the cauliflower florets to the spices and cook for about 8-10 minutes, stirring occasionally until the cauliflower becomes tender but retains a slight crunch.
- Add the cooked moong dal to the pan and mix everything together. Allow it to cook for another 5 minutes to allow the flavors to combine.
Step 5: Final Touches
- Adjust salt and spices according to taste.
- Garnish with fresh chopped coriander leaves for a burst of freshness and aroma.
- Serve hot with steamed rice, chapati, or paratha.
