Ingredients for Gobi Moong Dal Fry:

For Cooking Moong Dal:

  • 1 cup yellow moong dal (split yellow lentils), washed and soaked for 30 minutes
  • 3 cups water
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt (or to taste)

For Preparing the Fry:

  • 2 cups cauliflower (gobi), cut into small florets
  • 2 tablespoons oil (vegetable oil or mustard oil)
  • 1 teaspoon cumin seeds (jeera)
  • 1 medium onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 2 tomatoes, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • Salt, to taste
  • Fresh cilantro (coriander leaves) for garnish

Instructions:

Step 1: Cook the Moong Dal

  1. In a pressure cooker or saucepan, combine the soaked moong dal, 3 cups of water, turmeric powder, and salt.
  2. Cook on medium heat until the dal is soft and cooked well (about 4-5 whistles in a pressure cooker or around 30 minutes if cooking on stovetop).
  3. Once cooked, set aside.

Step 2: Prepare the Cauliflower

  1. Heat 2 tablespoons of oil in a large pan or wok over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add finely chopped onion and sauté until golden brown.

Step 3: Add Vegetables and Spices

  1. Add grated ginger and chopped green chilies. Sauté for 1-2 minutes until aromatic.
  2. Toss in the chopped tomatoes and cook until they soften, stirring occasionally.
  3. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

Step 4: Add Cauliflower

  1. Add the cauliflower florets to the spices and cook for about 8-10 minutes, stirring occasionally until the cauliflower becomes tender but retains a slight crunch.
  2. Add the cooked moong dal to the pan and mix everything together. Allow it to cook for another 5 minutes to allow the flavors to combine.

Step 5: Final Touches

  1. Adjust salt and spices according to taste.
  2. Garnish with fresh chopped coriander leaves for a burst of freshness and aroma.
  3. Serve hot with steamed rice, chapati, or paratha.
