  • 3–4 garlic cloves
  • 1-inch piece of ginger (chopped)
  • 2–3 green chilies (adjust to spice preference)
  • 2 medium-sized tomatoes (chopped)
  • 2 tablespoons grated coconut (optional but recommended for a creamy texture)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon tamarind pulp (or 1 small lemon-sized ball of tamarind, soaked and squeezed)
  • Salt to taste
  • Water as needed
For Tempering:
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1–2 dried red chilies
  • 8–10 curry leaves
  • A pinch of asafoetida (hing)

Step-by-Step Instructions


1. Preparing the Cauliflower
  1. Begin by washing the cauliflower florets thoroughly. To ensure any hidden insects or dirt are removed, soak the florets in salted warm water for about 10 minutes.
  2. Drain the water and pat the florets dry with a kitchen towel.

2. Sautéing the Ingredients
  1. Heat 2 tablespoons of oil in a large pan over medium heat.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add the mustard seeds and wait until they crackle.
  4. Toss in the garlic cloves, chopped ginger, and green chilies. Sauté for 1–2 minutes until fragrant.
  5. Add the chopped onion and sauté until it turns golden brown.
  6. Mix in the cauliflower florets and cook for 5–7 minutes. Stir occasionally to ensure even cooking.
  7. Once the cauliflower begins to soften, add the chopped tomatoes. Cook until the tomatoes turn mushy.
  8. Add the grated coconut (if using) and mix well.

3. Blending the Chutney
  1. Allow the cooked mixture to cool slightly.
  2. Transfer the mixture to a blender or mixer grinder.
  3. Add tamarind pulp and a small amount of water. Blend until you achieve a smooth consistency.
  4. Taste and adjust salt as needed. If the chutney is too thick, add a little more water and blend again.

4. Preparing the Tempering
  1. Heat 1 tablespoon of oil in a small tempering pan over medium heat.
  2. Add mustard seeds and let them crackle.
  3. Add dried red chilies, curry leaves, and a pinch of asafoetida.
  4. Pour the prepared tempering over the blended chutney.
