Cauliflower Tacos Recipe

Ingredients

For the roasted cauliflower:

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the toppings:

  • 1 cup shredded red cabbage
  • ½ cup diced tomatoes
  • ½ cup diced onions
  • ½ cup chopped fresh cilantro
  • ½ cup crumbled feta or cotija cheese (optional)
  • 1 avocado, sliced
  • 1 lime, cut into wedges

For the creamy sauce:

  • ½ cup plain yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt to taste

For assembling the tacos:

  • 8 small corn or flour tortillas
  • Salsa or hot sauce (optional)

Instructions

1. Prepare the Cauliflower
  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine olive oil, chili powder, smoked paprika, cumin powder, garlic powder, onion powder, salt, and black pepper. Mix well to form a spice marinade.
  • Add the cauliflower florets to the bowl and toss until all pieces are evenly coated with the spice mixture.
2. Roast the Cauliflower
  • Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 20–25 minutes, flipping halfway through, until the cauliflower is golden and slightly crispy on the edges.
3. Prepare the Creamy Sauce
  • In a small bowl, whisk together yogurt (or sour cream), lime juice, honey or maple syrup, garlic powder, smoked paprika, and a pinch of salt.
  • Taste and adjust the seasoning if necessary. Keep the sauce refrigerated until ready to use.
4. Prepare the Toppings
  • While the cauliflower is roasting, prepare the toppings. Shred the red cabbage, dice the tomatoes and onions, chop the cilantro, and slice the avocado.
  • Crumble the feta or cotija cheese, if using.
5. Warm the Tortillas
  • Heat a skillet or griddle over medium heat. Warm each tortilla for about 30 seconds on each side, until they are soft and pliable.
  • Keep the tortillas warm by wrapping them in a clean kitchen towel.
6. Assemble the Tacos
  • Place 2–3 roasted cauliflower florets in the center of each tortilla.
  • Top with shredded red cabbage, diced tomatoes, onions, and a few slices of avocado.
  • Drizzle the creamy sauce over the toppings, and add crumbled cheese if desired.
  • Garnish with fresh cilantro and a squeeze of lime juice.
7. Serve and Enjoy
  • Arrange the tacos on a platter and serve immediately with lime wedges, salsa, or hot sauce on the side for extra flavor.

Tips for Perfect Cauliflower Tacos

  1. Spice it up: If you like spicy food, add a pinch of cayenne pepper or red chili flakes to the cauliflower seasoning.
  2. Taco shells: You can use hard taco shells instead of soft tortillas if you prefer extra crunch.
  3. Make it vegan: Substitute the yogurt or sour cream in the sauce with vegan yogurt or cashew cream, and skip the cheese or use a dairy-free alternative.
  4. Batch cooking: Roast extra cauliflower and store it in an airtight container for up to 3 days. Reheat in the oven or air fryer for crispy results.
  5. Add protein: For a heartier meal, include cooked black beans or chickpeas as a topping.
