Cauliflower Kofta Curry Recipe

Ingredients

For the Koftas:

  • 2 cups cauliflower florets (grated or finely chopped)
  • 2 medium potatoes (boiled and mashed)
  • 2 tablespoons chickpea flour (besan)
  • 1 teaspoon ginger-garlic paste
  • 1 green chili (finely chopped)
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon garam masala
  • Salt to taste
  • Oil for frying

For the Gravy:

  • 2 medium onions (finely chopped or blended)
  • 2 medium tomatoes (pureed)
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies (slit)
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 cup yogurt (whisked)
  • 1/4 cup cashew paste (optional, for a richer gravy)
  • 2 tablespoons fresh cream (optional)
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish

Instructions

1. Preparing the Koftas

  1. Grate or finely chop the cauliflower florets. Ensure they are dry; pat them with a kitchen towel if needed.
  2. In a bowl, mix the grated cauliflower, mashed potatoes, chickpea flour, ginger-garlic paste, green chili, cumin seeds, garam masala, and salt.
  3. Knead the mixture into a soft dough. If it feels too wet, add a little more chickpea flour.
  4. Divide the mixture into small equal portions and roll them into balls.
  5. Heat oil in a deep pan or wok. Fry the koftas in small batches until golden brown. Drain on a paper towel and set aside.

2. Making the Gravy

  1. Heat oil or ghee in a large pan. Add cumin seeds and let them splutter.
  2. Add the chopped or blended onions and sauté until golden brown.
  3. Mix in the ginger-garlic paste and cook until the raw smell disappears.
  4. Add the tomato puree and cook until the oil starts separating from the mixture.
  5. Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for 1-2 minutes.
  6. Lower the heat and add whisked yogurt and cashew paste (if using). Stir continuously to avoid curdling.
  7. Add a cup of water to adjust the gravy's consistency. Let it simmer for 5-7 minutes.
  8. Sprinkle garam masala and add fresh cream for a richer taste.

3. Assembling the Dish

  1. Just before serving, gently add the fried koftas to the gravy. Let them soak in the flavors for 2-3 minutes.
  2. Garnish with fresh coriander leaves and a drizzle of cream.

Tips for Perfect Cauliflower Kofta Curry

  • Dry Vegetables: Ensure the cauliflower is dry to prevent the koftas from breaking while frying.
  • Frying Temperature: Fry the koftas on medium heat to ensure they cook evenly and don’t burn.
  • Avoid Soggy Koftas: Add the koftas to the gravy just before serving to keep them crisp.
  • Rich Gravy: Adding cashew paste or cream enhances the texture and richness of the gravy.
  • Adjust Spices: Customize the spice levels to suit your taste preferences.

Serving Suggestions

  • Serve Cauliflower Kofta Curry with hot butter naan, roti, or steamed basmati rice.
  • Pair it with a simple cucumber raita or salad for a complete meal.
