Ingredients
For the Koftas:
- 2 cups cauliflower florets (grated or finely chopped)
- 2 medium potatoes (boiled and mashed)

- 1 teaspoon cumin seeds (jeera)

- 2 medium tomatoes (pureed)
- 1 teaspoon ginger-garlic paste
- 2 green chilies (slit)

- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 cup yogurt (whisked)
- 1/4 cup cashew paste (optional, for a richer gravy)
- 2 tablespoons fresh cream (optional)
- Salt to taste
- 2 tablespoons oil or ghee
- Fresh coriander leaves for garnish

1. Preparing the Koftas
- Grate or finely chop the cauliflower florets. Ensure they are dry; pat them with a kitchen towel if needed.
- In a bowl, mix the grated cauliflower, mashed potatoes, chickpea flour, ginger-garlic paste, green chili, cumin seeds, garam masala, and salt.
- Knead the mixture into a soft dough. If it feels too wet, add a little more chickpea flour.

- Sprinkle garam masala and add fresh cream for a richer taste.

- Just before serving, gently add the fried koftas to the gravy. Let them soak in the flavors for 2-3 minutes.
