Innovative Parwal Kachari Sabzi Recipe: A Culinary Delight


Material:

- 500 grams fresh Parwal, wash and cut into pieces

- 2 medium sized onions, finely chopped

- 2 medium sized tomatoes, finely chopped

- 3-4 garlic cloves, finely chopped

- 1 inch piece of ginger, grated

- 2 green chillies, finely chopped

- 1 teaspoon cumin

- 1 teaspoon mustard seeds

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- salt to taste

-Fresh coriander for garnish

- 2 tbsp cooking oil


Instruction:


1.Preparing Parwal:

      - Wash the wall thoroughly under running water.

      - Trim the ends and peel off the skin lightly, leaving a few strips for aesthetic appeal.

      - Cut the Parwal lengthwise and if the Parwal is too big or hard, remove the seeds. Then cut them into small cubes.


2.Tempering the spices:

      - Heat oil in a pan on medium flame.

      - Add cumin and mustard seeds. Let them crackle.

      - Add finely chopped garlic, grated ginger and chopped green chillies. Fry for a minute until fragrant.


3. Adding Fragrance:

      - Add chopped onion to the pan. Fry until they become transparent.

      When the onion is cooked, add chopped tomatoes to it. Cook until they become soft and oil starts separating from the spices.


4.Making it more spicy:

      - Lower the flame and add turmeric powder, red chilli powder and coriander powder. Mix well to evenly apply the spices on the vegetables.

      - Let the spices cook for a few minutes, which will enhance the taste.


5.Incorporating Parwal:

      - Now add chopped parwal in the pan. Stir gently to combine the spices with the parwal pieces.

      - Add salt as per your taste.


6.Cooking Vegetables:

      - Cover the pan with a lid and let the vegetable cook on low to medium flame for about 10-12 minutes or until the parwal becomes soft. Stir occasionally to prevent sticking.


7.Final Touch:

      - When the parwal is cooked well and becomes soft, sprinkle garam masala over the vegetable.

      - Garnish with freshly chopped green coriander for more freshness and aroma.


8.To serve:

      - Your innovative Parwal Kachari vegetable is ready to serve hot.

      - Enjoy it with roti, paratha or boiled rice for a satisfying dining experience.
