Cucumber curry, also known as "cucumber curry" in Hindi, is a delicious Indian dish that showcases the refreshing flavor of cucumber. This recipe combines the crunch of cucumbers with aromatic spices, creating a dish that is both light and delicious. Follow these simple steps to make cucumber curry at home.


Refreshing Delight: Mastering the Art of Cucumber Curry


Material:


- 4 medium sized cucumbers

- 2 tablespoons vegetable oil

- 1 teaspoon cumin

- 1 teaspoon mustard seeds

- 2 green chillies, finely chopped

- 1 teaspoon ginger paste

- 1 teaspoon garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon red chili powder

- salt to taste

- Fresh coriander for garnish


Instruction:


1. Prepare the cucumbers:

     - Wash and peel the cucumber thoroughly.

     Cut the cucumber into slices or cubes as per your choice and keep aside.


2. Heat Oil:

     - Heat vegetable oil in a pan on medium flame.


3. Temper the spices:

     - Add cumin and mustard seeds in hot oil.

     - Let them crackle and let their aroma come out.


4. Add Fragrance:

     - Add finely chopped green chillies, ginger paste and garlic paste in the pan.

     Fry for a minute until aroma comes out.


5. Spice it up:

     - Lower the flame and add turmeric powder, coriander powder and red chilli powder to the pan.

     - Stir well and cook for a minute.


6. Introduce Cucumber:

     Reduce the flame to medium and add the chopped or cubed cucumbers to the pan.

     - Mix cucumber with spices well.


7. Cook Curry:

     - Sprinkle salt as per taste on the cucumber.

     - Cover the pan and let the cucumbers cook for 8-10 minutes while stirring occasionally.

     Cook until the cucumbers are soft but not mushy.


8. Check for doneness:

     - Pierce a piece of cucumber with a fork to check whether it is ripe or not.

     - Once soft, uncover the pan and cook for an additional 2-3 minutes to evaporate excess moisture.


9. Garnish and serve:

     - Switch off the flame and take out the cucumber curry in a serving dish.

     - Garnish with fresh green coriander.


10. Enjoy:

      - Serve with hot roti, paratha or rice.

      - It also pairs well with curd or raita as a side dish.


Tips:

- Use firm and fresh cucumbers for best results.

- Adjust the spice level as per your preference.

- For spicy taste, squeeze lemon juice in it before serving.
